Pancake Day is one of my favourite days of the year. Yes I’m a foodie, and I especially love anything sweet. I’m definitely one of those people who go all out on Pancake Day and make far too much. I feel like it’s the one-day of the year you can actually get away with it.
Last year I tried my hand at making banana pancakes. I’d tried them at a café and they tasted delish! They’re also meant to be super quick and easy. However, mine didn’t turn out so good. To me they were more like banana omelettes … I may have made them wrong.
Either way, this year I found a brand new recipe to try, that took out the eggs completely! These are banana and buckwheat pancakes and they are fully vegan.
This is what I did.
2 ripe bananas
125g buckwheat flour
150g wholemeal plain flour
1 tsp baking powder
½ tsp ground cinnamon
1 tsp vanilla extract
2 tbsp maple syrup
180ml almond milk
2tbsp coconut oil
Peel the bananas and put them into a large bowl, then mash with a fork until creamy.
Sift in the two flours, baking powder, and cinnamon, then stir well.
Add the vanilla extract and maple syrup, stir well again to combine.
Finally, whisk in the milk until you have a thick, smooth batter.
Put a non-stick frying pan over medium heat and add the coconut oil.
Using a ladle pour in one to two ladleful’s of the mixture. Don’t make them too big or they’ll start to break when you flip them.
Allow to cook gently for 2-3 minutes on one side until they start to bubble. Then flip them over and cook for a further 2-3 minutes until thick and fluffy.
Now’s the fun part! Serve with whatever toppings you like, mine had strawberries and chocolate. You can try blueberries, bananas, maple syrup, even ice cream! It’s completely up to you – go wild. I just hope you like these pancakes as much as I do.
